天明元年創業。お茶屋様への出前、ご進物用の名物「鯖姿寿司」で商いがはじまりました。町衆の御馳走「鯖寿司」をプロの技術で作る専門店。それがいづうの原点。海から遠い京都で美味しく鯖を食べる為に磨かれた料理人の技術、若狭の鯖を人の足で運ぶ鯖街道は知恵と労力の結晶であり、文化と呼ぶにふさわしい京の名物料理です。
